  1. Preheat the oven to 350°F.
  2. In a large mixing bowl, combine the ground beef, ground pork, onion, celery, carrots, garlic, parsley, ketchup, chicken stock, Dijon mustard, Worcestershire sauce, salt, pepper, and eggs. Mix well.
  3. Add the panko breadcrumbs and Parmesan cheese to the meat mixture and combine until just blended.
  4. Transfer the meat mixture to a 9 x 5-inch loaf pan.

  7. Let the meatloaf rest for 10 minutes before slicing and serving.
